Red Braised Pork

It consists of diced streaky pork that's boiled with ginger and red wine vinegar before being sautéed with crystal sugar, soy sauce, star anise, cinnamon and orange zest. The dish is then slow-cooked until the sauce is thick and sticky, and it's served with steamed rice and a garnish of sesame seeds.

Char Siu

Char siu is a very popular Chinese dish that has a similar flavour to barbecued pork, but it also has lightly sweet undertones. It's made by brushing pork fillet with a sauce consisting of honey, soy sauce, hoisin sauce, five-spice powder and rice wine. Five-spice powder is a blend of Szechuan pepper, cinnamon, cloves, star anise and fennel and is a popular spice blend in Chinese cuisine. The pork fillet is then roasted, sliced and brushed with the sauce again just before serving. Enjoy char siu with rice and lightly cooked greens.

Twice-Cooked Pork

Twice-cooked pork is a popular dish originating from the Szechuan province, which is known for its liberal use of seasonings and fiery hot dishes. Twice-cooked pork is a spicy dish with a mildly sweet aftertaste that will leave you wanting more. Streaky pork is firstly boiled with ginger before being stir-fried with fermented chilli bean paste, garlic, salt and a little sugar. It's an aromatic dish that's often served with a garnish of spring onion and can be enjoyed with rice or noodles and lightly cooked vegetables.
